Here in the Northwest, the summer fruit is at its peak. The peaches are perfect right now and the blackberries are everywhere, dark and full, ready to be picked. I wanted a light lunch incorporating all this amazing fruit I have on my counter.
I just took mixed greens, added almonds slivers (would have been fantastic with hazelnuts I think too), and put the fruit on top. For dressing I used this recipe for champagne vinaigrette. So good and incredibly easy.
